He's totally mad and very matter of fact in a comedic way and his food looks (and tastes by all accounts) amazing. There are some great ideas in the book and good tips too for pimping up flavours in your sandwiches. He gives the recipe for his go to bread, focaccia, which is the one they use most in his café.
