Superb Knife -- Authentic Japanese Yanagiba Design & Super Sharp!
This knife is a winner. Razor sharp, top-quality materials, and world-class fit & finish. This is an authentic Yanagiba design sushi knife -- made in China and priced at just $21. Wow! Such a great knife, I decided to buy a second one as a special gift.The quality high carbon stainless steel offers the best of both worlds -- scalpel sharp edge and thankfully an anti-rust blade surface. This is a genuine single bevel sushi knife blade (Yanagiba) designed for right-handed use. The nearly flat backside of the knife has a slight curvature (called Urasuki). This creates a small air pocket that prevents the fish slice from sticking to the blade.The blade length, width, and weight are perfect for the home chef and it balances nicely in the hand. The attractive handle is comfortable and the perfect size for most hands. The smooth and solid one-piece bolster is a real plus and it is easy to keep clean. Like all new knives, it is recommended this knife be carefully wet stone sharpened to keep the super sharp edge (see YouTube video by Musashi if needed). A diamond sharpening rod works quite well too -- it's more convenient and easier to use. I keep my knife in the nice retail box for protection and to preserve the fine edge.Having lived and worked in Japan for several years, a knife of this quality would be well over $200. If you are a serious foodie or a casual cook, this beautiful knife should put a smile on your face. It certainly did mine. Highly recommended.
