This seaweed is so good, also affordable and healthy. It becomes plump and easy to clear after a few minutes of soaking. I add a little soy sauce and either lemon juice or vinegar for a salad topper, a side dish with tofu or salmon, or a poke bowl ingredient.

I’ve tried other seaweed for my miso, but this is the best yet. They expand exponentially, so be prepared! Yummy.

The Nice Witch's Baby Seaweed Flakes - or wakame in Japanese - is a healthy and nutritious ingredient to add to soups, salads, and stir fry. Unlike the dried sheet seaweed that you can eat as is, this seaweed requires some soaking to rehydrate it before eating...I highly recommend against sprinkling over your salad or soup. If you're not sure you've tried it before, it's the same type of seaweed that is often seen in miso soup at restaurants as well as in wakame seaweed salad. While you can use this for seaweed salad, if you want the same seaweed mix as what you'd get at sushi restaurants, you will need to pick up a few other varieties of seaweed to mix in, as this one only contains one type. The seaweed rehydrates very quickly (I use hot water to speed up the rehydration process), and a little goes a very long way. The seaweed pieces vary in size with many of the pieces being about 1"x1". The texture is very good, and I liked how it wasn't overly crunchy, thick, or slimy. Everything arrived fresh and properly dried, and there was no dust or debris in the bag. The seaweed holds up well to being boiled and I had no issues with it getting mushy or breaking apart. The bag is big- there are easily enough servings in each bag that we can eat for many, many meals. It's a good value for the amount of seaweed you get and something I would purchase again.
