Yes, most stages you get an option to pick from multiple characters and you and player 2 will simply have to pick from those characters.

Is the game in English? Can I change it to other language such as Japanese?

if i recall correctly, under the settings optioni n the game, you can change the language, also included is captioning. I no longer own the game.
