The product comes with some red paper for templates (this give a better visibility) but you can use standard copy paper and print / create designs as you wish. Will it work with an iPad?

The application to control the device will work with an IPad. However, I could not get the airplane to fly consistently. After one of the numerous crashes, the propeller would not stop completely (would only slow dow)

will there be a version where it has elevons for more advanced control?

You actually already have this ability - since the module can connect to almost any paper airplane you can create you can add additional rudders or elevators to the paper to extend the " control surfaces" on your plane.
