What's the shelf life of this product unopened?

This is probably a question for the manufacturer. It is a small package and was consumed before I had to worry about it. Usually if products in unopened packages that are kept in cool dry storage last longer than “use by date” but you are on your own if you do so.

Is this corn free? It’s not labeled free of corn. What is used as an emulsifier?

Yes, this pure coconut milk powder is corn-free. No corn. There's a picture of the back of the bag in the description of this product. Click on it and you can read the list of ingredients. There is only one ingredient...powdered coconut milk.

Can you use this to make whipped coconut cream?
