Does this need to be refrigerated after opening?

It says that it does, however, so does my Kikkoman Soy sauce, but I have never refrigerated it. This sauce appears to have more sugar and smells like malt. The danger, I think, is that it might ferment! If so, the smell of alcohol would certainly alert you. I have left mine out 3 days and it is no different than when I first opened it.

Is this also known as Sheng Chou soy sauce?

"Sheng Chou" indicates, in Chinese, that you are dealing with "light soy sauce." Pearl River Bridge is a brand name. My son-in-law, the ethnic Chinese soul in our family, says that Pearl River Bridge is the brand to buy, whether it's regular or light soy sauce.
