To my knowledge there is no flour in these. It get's it salty flavor from ammonium chloride. Sounds terrible but I grew up with salted licorice and love it!

Q: what's the percentage of sal ammoniac in this? is that a coating of it on the outside?

It is very evenly balanced between being sweet and salmiakki. It is just sugar on the outside. Highly recommend if you are looking for a perfect balance between sweet and salmiakk. :)

This product is gelatin free and is suitable for vegetarians.
