How do I get the instructions back in English?

Try to resync the ear piece, then triple tap the ear piece in quick succession. That should change the language mode of the ear piece, or at least that is what worked for me.

No unfortunately. You can only use one at a time. I have two So what I do is use one while the other is charging. They last quite a long time.
