About how many peppers come in a can? I am making a recipe that calls for 4 peppers. Do you think one can will suffice or should I get 2?

I would say one can be enough. I don't know how many peppers was in a can. According to can specs it says 6 servings to a can. If I remember right there was at least 4 and no more than 6 peppers per can. I hope that does help.

How do you store the left over if you only use a tablespoonful?

I found that it can be stored for quite some time if refrigerated in a small glass jar with a tight fitting lid.

Are these spicy? Hot? Mild?

I find them very spicy, but with a lot of flavor. I underestimated the heat the first time I used it in enchiladas and it was definitely hot. Delicious!
