For a delicate white bread like french bread, coating the top and bottom of the bread (dusting the pan) with whole flour and dusting the top, does the trick nicely.

Perfect Breads
I buy both the Unbleached White and the Whole Wheat Flours in 20lb bundles like this. You can't beat the cost savings in bulk and Bob's Red Mill is a quality that you can count on. When I get my flours, I prep them into quart freezer bags with 1 1/2 cups of each kind. (I find that 3 cups is a lowest common number for bread recipes) I can get 10 loaf bags by opening one of each, so you can approximate 5 loaves per bag. When I determine what kind of breads and quantities of each I'm going to make out of the entire batch, I add dry ingredients to the freezer bags. If you add all the dry ingredients EXCEPT the yeast, you have pre-made bread mixes however you want them. Then I just add labels and stack in my freezer. It makes bread making so much easier and ensures my ingredients stay fresh.

Perfect
I have tons of Bob's Red Mill items in my home and this is just one of those many that is just perfect. Everything I get is so wonderful, healthy and just makes me want to make good things. Flour is amazing... I have lots of beans and oh my gosh do they ever make fabulous, hearty soups etc. especially for those of us living in FAR Northern Maine. Been a cold winter that has seen lots of enjoyable meals with Bob's Red Mill products.
