This manchego was delish. I grated it for stuffed zucchini (Spain on a Fork) and it was hard to stop snacking on it. The rind is not edible, I don't think. One wedge made about two cups of grated cheese. I liked that there was absolutely no "funky" smell; I've had cheeses that tasted great but smelled kinda like feet (pecorino romano wafts to mind) and this was not one of those. I'd compare it to either gruyere or a good parmesan. Salty and sort of nutty.

Manchego is my favorite cheese, and has none of the drawbacks of American dairy. You may prefer cheese a little younger and softer. Big benefit is Amazon delivered it locally in a couple of hours.

This is authentic aged 6 months sheep’s milk manchego cheese. You can sometimes find longer-aged manchego at Whole Foods but a 6 month age gives you just the amount of sharpness without the texture being too dry or crumbly. Purchased twice, will purchase again.
