where is the black olives?

I didnt see nor taste black olives

Why is this stuff allowed to be called Parmesan when it's a fake, low quality knock-off? It doesn't even have the right texture.

What you are looking for is Parmigiano-Reggiano. Cheese can only be called that if made with calf rennet in the traditional way. It may also contain other animal rennet including pork. The name Parmesan does not have the same restrictions and often means that the cheese is made from vegetarian friendly rennet. This is why the texture and taste are different.

NO RIND. Quite soft at first, I keep mine a few days before I use it just so it can get the right consistency
