What is the shelf life or use by date once opened

I have used it, and it’s delicious. Closed the bottle put back in the pantry. Every time I leave it for a period of time it hardens so it won’t squeeze through the spout anymore and is hard to get out of the bottle. I have tried keeping it in the refrigerator too and the same thing happens. Next I’ll try transferring it to a Ball jar and vacuum sealing it. I wish it came in a Ball jar so it would be easier to get out oncec it hardens.

What's the PH level? It could be on the high alkaline side of the spectrum given the high level of magnesium and potassium content.

This is a question better asked of the manufacturer. Or, perhaps, use a pH strip. Amazingly enough, Amazon sells them. Quickly looking up dates, stated pH of 6.5 - 8.5. Good luck.
