Ha! Not only do I use it two to three times a week, I have either purchased it for everyone in my family with an instant pot or made them spend the money themselves. It is worth the money 10 times over! My husband and i do love meat, *however* because of food science awareness and other factors, we are doing our best to eat "clean" as much as possible monday through friday. Bottom line: This cook book has made eating clean (no animal products) not only something we actually enjoy (yes, jaw drop), but easy as well... added bonus: my husbands cholesterol actually dropped 30% eating these recipes throughout the week using Megan's vegan option at the bottom of every page, something his doctor said he had never seen before in someone not taking medication.... (watch the Game Changers documentary if you're an athlete) I never go to bed hungry anymore trying to diet, in fact, i feel like im eating more than i use to and weigh less. Every recipe has a gluten free and vegan option. And every recipe is absolutely delicious... you have to tweak a few to your liking, but they really are all delicious... The oil content is low to non existent... and the veggie content packs a huge health punch... having said that, the meat recipes are amazing too. The mongolian beef is one of our favorites. The picture i took is the taco salad with zesty lime vinaigrette on pg 97. A family staple and absolute favorite. Notes: i triple the garlic on every recipe (if not quadruple), and if you dont have the right veggies, i just add other veggies. It almost always works out perfect. Do yourself a favor and buy this book. You won't regret it. Mine is nearly worn out so ill probably be buying another one myself soon. Thank you Megan for this book. It is such a gift! While I won't eat the chicken or meat, I'm happy to see that all the recipes have vegan options, and if I want to cook a non-veggie option for family, I can just pick up her book and make a healthy dish! Do yourself a favor and get a copy of Megan's book. You'll probably want the other ones, too. If you're not convinced, just check out her recipes on her website first. You'll see how easy and tasty her food is. I've never been so impressed with other healthy cookbook recipes, but Megan's recipes are incredible.

Best cook book I've ever owned!!!

I've purchased several Instant Pot cookbooks in the past, but I don't end up using them. This is the first one that I know I'll use in its entirety since the recipes are easy to follow and super tasty. I would buy an Instant Pot, so I could make these recipes.
Hi everyone! I was a recipe tester for Megan over the last 6 months for this book, so I've made/helped fine-tune at least 3/4 of the recipes. Before testing for this book, I had purchased an Instant Pot, and had liked when I used it. One reason it was dormant was I only used it for stews, which admittedly were delicious. I didn't... care enough... to invest the time to learn how to reliably cook other healthy things with this new tool when I was already bffs with my stove. Luckily Megan came to my rescue, and did the bulk of that work for me! Most notably, Megan helped me cook *good* chicken breast in the IP, something I **really** couldn't do before. I cannot stress how amazing this round of recipe testing has been, because most of the recipes in this book can be made at the same time, in the same pot, with minimal active maintenance. That's the biggest time saver. After you account for pressurizing and de-pressurizing, on average, I'd say the addition of the IP saves between 10-20m*, but your biggest gains are the ability to do other things while you cook. Every recipe in this book is also gluten free, although some have wheat options. I can confirm that Megan originally wrote all recipes gluten free, then added a few gluten-full modifications, for those who prefer them. RE How this book compares to her first two: It has more meat-centric dishes, which I appreciate. It also feels more "comfort food-y", and indulgent, although the nutritional content is comparable to her previous books (and blog). I think her second book, No Excuses Detox, is still my favorite. But this book is *absolutely* worth purchasing, even if you have the other two, because the recipes are sufficiently different (but clearly from Megan!). I'm sure this will be a staple in my kitchen for years to come. My favorite recipes in the book are: 1. Cheeseburger salad with special sauce (the sauce is PERFECTION. I would buy the book for this recipe alone) 2. Cauliflower mac-and-cheese (FYI I don't like cauliflower) 3. Creamy tomato soup 4. Lazy falafel wraps *The time saved for legume/dried bean recipes can be on the order of hours. Megan's hummus recipe (from dried chickpeas) shaved off hours.

Awesome ideas and flavor combos but recipes need some adjustments
I’ve had this book for multiple years now and it is a staple in my kitchen. We’ve tried most of the recipes and have been really impressed with the flavor combinations and great ways of making meals lower calorie or sneaking in veggies. My one issue is that a lot of the recipes, if followed exactly, are very bland, and or too watery. I think a cookbook is stellar if I cook a recipe exactly as it says and it tastes awesome, but with this cookbook a lot of the recipes I have to almost double the spices or seasonings, and I often have to adjust the amount of water or it’s too runny/watery. One of the tricks to overcome with the instant pot is that all of the liquid is trapped inside and doesn’t evaporate like on the stove top. I’ve had to drain multiple recipes and pencil in corrections because recipes have turned out far too watery or runny. Other than making these kinds of adjustments, it’s an awesome cookbook filled with lots of healthy and creative recipes that can be made quickly (which is why I’m obsessed with my instant pot)

Original, Healthy and Easy to Prepare Recipes
The Detoxinista has been testing these recipes for months, and I'm so excited that the book is finally published. Megan has managed to create even more creative, varied and yummy meals, this time with the ease of cooking in an Instant Pot. I'm making Egg Roll in a Bowl tonight and will have no mess on my stove because all cooking will happen in my Instant Pot. This is the third of Megan's cookbooks I've purchased, and all of them are excellent. Each cookbook has health and diet tips, and the recipes enjoyed by my entire family. I have the Kindle version of The Fresh and Healthy Instant Pot Cookbook, and it is formatted perfectly for use on my Kindle, or using the Kindle app on my phone or Chromebook. That kind of attention to detail with formatting doesn't happen with every digital book. The photos are gorgeous and the instructions are easy to follow. I am planning my meals for the week, and they will all be from this cookbook. I'm looking forward to delicious, healthy meals!

Healthy, Easy, and Fun!
I have been looking forward to this book ever since it was announced earlier in the year, and so far I am not disappointed! Megan Gilmore is an awesome author, I own all of her books and visit her website frequently. She has a knack for developing delicious recipes that are healthy and extremely easy to make. I joined her community on Facebook, and when she started posting more about instant pot cooking, it intrigued and inspired me to buy my own. With Megan's help, I've been able to experiment and make many tasty dishes in the instant pot! Some of my favorite recipes so far from the new book are Eggroll in a bowl, Kungpao Chickpeas, and Tikka Masala. I also really appreciate that Megan has included a FAQ in the book for the instant pot, and breaks down the entire cooking cycle (including time to pressurize) for all of the recipes. Also- the fact that there is a picture for every recipe is amazing! I highly recommend this book!

Disappointed
My husband and I are disappointed in this book. There are some good recipes, like the African Peanut Stew, but overall the recipes have not impressed me. They are too bland and boring, or dirty too many dishes. We made the Shepherd Pie tonight and it was terrible. Just watery mush. Some recipes needlessly use the instant pot for just one vegetable or grain, so you end up dirtying extra dishes. There are much better resources out there for healthy instant pot meals.

Flavorful, Gluten-free Recipes
This book takes all the guesswork & stress out of meal planning and prep but delivers high on flavor. As someone who needs to follow a gluten-free lifestyle, I've been following detoxinista.com for a few years now and own her other books as well. However, this one takes makes my life so much easier and better. I've tried a couple of recipes so far, and each one has become a new favorite. Megan has clearly taken time to work on these recipes. There are some recipes that call for whole wheat products, but every single one of them has a gluten-free substitution along with any changes in cooking times. I also love the fact that the book has non-vegetarian recipes. Quick, hassle-free, one-pot meals with minimal clean-up. Who doesn't love that? And perfect for the carnivores in your life!
