Perfect Yeast
I love this yeast! It’s such a great value for the size, and it works perfectly every time. My breads and rolls come out light and fluffy, and the vacuum-packed bag keeps it really fresh. I bake a lot, so this 1-lb bag lasts a while and is worth every penny. Highly recommend for any home baker!

Yeast matters
This is a good yeast. I keep mine in a sealed coffee canister (the kind with a silicone seal) in the freezer and it lasts a long time. The active dry yeast is inert if dry and cold, so it does store well. Since this is a pound of yeast and we usually just use a couple of teaspoons per loaf, store it in the freezer sealed and it will keep for at least a year; I've gone five years but I don't recommend that AND you should "proof" the yeast before you use it, in other words, dissolve it in a bit of the warmish liquid and give it a tiny pinch of sugar and see that it puffs up before dumping into your bread mix. Since this is NOT the instant dissolve, rapid rise kind of yeast, I'd suggest proofing it before putting into a bread machine (if you are experienced) or if you are making bread by hand. I use my mixer to make bread, I just prefer that method and I find that dissolving this yeast and mixing in works extremely well. If you make a lot of sweet doughs, you will notice they don't rise quickly. In that instance,getting some of the gold package yeast LeSaffre Saf-Instant Yeast, Gold, will do better. I bought this yeast 2 years ago and it's still good, I store it in a sealed jar in the refrigerator. I make bread with it and it's fantastic. I do proof it first, as others have recommended.

Saves money over the packets if you use lots of yeast
We use the equivalent of 1-2 packets of yeast in our septic per month at the recommendation of the septic company. This was a great buy, I just dumped it in a canning jar and added a measuring spoon and store it in the bathroom. Once a month I measure out the needed amount, flush it and done. No more single packets.

No use by date - Revised - Use by Date found
REVISION: I was contacted by the seller and they pointed out where the manufacture and use by dates are located. I didn't notice these initially, but they are there. It is on the back, right on the seam of the bag - mine was 1219 (Dec 2019) manufacture date, and 1221 (Dec 2021) Best if used by date. Also, the yeast proofs out fine. Changing rating to 5 stars. ORIGINAL REVIEW: I received this yeast and it is as advertised, but it does not have a use by or good until date, so I have no idea if it is viable yeast or not. I have no idea how old this is. If it does proof, I'll revised my comments and rating.

Excellent Yeast Bread
This is an excellent yeast for breads made with biga or poolish. It gives you the flavor of the grains, not the flavor of the yeast itself. It also keeps in the freezer for pretty much as long as you need it to (which is good, because sponge breads don't need a lot of yeast). My only quibble is that there doesn't seem to be a way to buy it in a size that works for a casual baker.

Definitely worth the money
Exact same product that they sell for five dollars a little jar at Walmart. I sadly could not find this bulk size at any of my local stores but the shipping was fast and it was packaged really well. I have already made like half a dozen rounds of cinnamon rolls, and over a dozen loaves of bread, have not even gone through half of it.
