Q: has anyone tried steaming rice using the included steamer basket? how did it work? how much rice can it make? im hoping for a 2 or 3 cup capacity.

The holes in the steamer basket are to big. I have made rice in the cooker not using the steamer basket in 5 minutes.

Q: Does this cooker use a gasket and if it does where do you get a replacment?

Yes, it has a rubber gasket that fits inside the locking rim on the lid. To find out if you have it fitted correctly, try to lock the lid. If it won't lock, just flip it over and it will be correct. Spares can be ordered from Culina. The number is in the brochure or on their website.

Q: how does the pot 'know' how long to cook the food, considering, obviously, there are an almost infinite items that can be cooked?

It comes with a cookbook with guidelines for how long to cook each type of food. For me there has been some trial and error as I become accustomed to this new pressure cooker. I knew how long to cook everything in my old one, but this one is different, with different weights of pressure.

Q: can be used on induction oven?

If you meant stove top and not oven then yes. It says it is intended for use on following stovetops: induction, gas, electric, glass and halogen. ;-) Oh and just you know, it isn't wide like the old type. It is more narrow and a little higher. I'm not sure if you could get a big roast in it.
