Q: What is the difference between twin pro and pro?

The twin pro has a full bolster while the pro has the angled bolster that allows you to use the entire blade. The full bolster, found on Wusthof and other chef knives, prevents you from using or sharpening the rear edged of the knife. The angled bolster on the pro is an innovation that lets you use the entire knife blade for cutting. I prefer the pro over the twin pro.

Q: Are all the blades wide or more on different sizes

It's really hard to tell from the information on Amazon, not even the photos are helpful because the "chef's" knives all look the same. As far as I can tell, only the 6" and 8" come WIDE, but be sure that's what you select because they also offer the regular Pro chefs' knives. I specifically wanted the WIDE blade. I gave up and I bought my Pro 6" wide blade from Wms-Sonoma instead (for less than it is here).
