Q: could i swap the overhead shower for a bath spout?

The head is seperate but m the packaging, but may be. Challenge

Q: We switched to this system and the water pressure is now much lower. Does this system only pump through less water?

Check the filter in the head, it is a water reduction filter, remove it

Q: what is the flow rate at 1bar?

Sadly we haven’t fitted the shower yet as it’s part of our renovation, due to be fitted mid April! Sorry I can’t help more.
