Q: What is the difference between this model and the previous model?

The newer model has a cover on the top that covers the gear. The older model lacks this cover.

Q: Is the piston for this made of plastic

Its a nylon material like the plastic caps you can get for the bottom of table and chair legs, but about 3/4” thick. Very strong and naturally slippery. There is a groove around the side for the included silicone gasket that is about 1/4” diameter. I had no meat bypass this gasket during use.
