Q: do I need to have all 4 leads connected at the same time?

According to the instruction manual, yes. A bit of a pain.

Q: What type of probes come with it? (temp range) i will be using it to check the heat of metal out of a forge, thanks!

Look at the 4th pic in the add - it says: wire probe range 58F ~ 752F. You can buy proves that will work with it that go to 2500F

Q: I'm annealing brass, how fast does this read temperature? Response time?

The response is very fast (one or two seconds), but there is some "bounce" and noise in the readings.

Q: Is this good to test a heat press?

I use it to accurately gauge the temp of roasting coffee beans, it gives an accurate reading, I have never used a heat press so can not comment on same
