Will this hold a heavy 3” college book?

I use this for a large heavy Bible. It's not quite 3" but I think it would work for that size book

Can the front clamp be set down to allow page turning without removing the book from the stand?

Maybe but then the book might slide off the stand without the front clamp. Or, if the book has a solid back binding, it may not remain open.

Can it hold just 1 or 2 sheets of paper upright?

I holds as many sheets as you want to put on it. The front bar can be pressed up against sheets or books to hold them in place. I use the stand to read books.
