Fantastic recipes, quick, easy, delicious. Well-written cookbook
This is a fantastic cookbook. I was a bit hesitant to purchase the book, so I went over to the authors blog and found a couple of Indian food recipes for the instant pot over there that looked good. Both recipes were quick and easy to make and both came out absolutely delicious, at least as good as what I get at my local Indian restaurant. This is a great outcome, especially considering I'm new to instant pot cooking and new to cooking Indian food at home. Both recipes made quite a lot of food, I was able to freeze the leftovers and they re-heated beautifully (no more grocery store frozen Indian food dinners for me, this is so much better, tastier, and cheaper).This book includes a color photo of every recipe on the page with the recipe as well as some introductory text that puts the recipe in context. Most of the dishes are new to me so knowing that the end product looks like and having some context is incredibly helpful.I'm also delighted that this cookbook inspired me to find and shop at my local Indian grocery store. They've got all kinds of great stuff that I've started to include in my American recipes with great results. I'm sure that this will vary a lot depending on how you shop, but I also found the recipes in this book to be very affordable. If you are watching your food budget, you'll find some great cheap eats here, after the initial cost of purchasing the spices (at my local Indian grocery store I found the spices to be very reasonably priced).This book isn't huge, but it's packed with recipes I'm excited about making. I'm trying to eat a diet of whole foods with no added sugars (no white sugar, no honey, no maple syrup, no molasses, no ground up dates...) and I love that every recipe in this book fits the bill (except the desserts, but I consider that a good thing, I love that the recipes are authentic, not modified-diet recipes). I'm also trying to eat more butter and I love that this book gives me lots of opportunity to add more butter to my meals (just add ghee).

Great Book!
This cookbook was a lifesaver for me when I was in school, and I still reach for it at least once a week. I have tried most of the recipes and enjoyed all of them. They are fairly quick to make and delicious. The butter chicken especially is a winner!

This book is great if you're new to Indian cooking -OR- new to Instant Pot
Note: I don't usually take the time to write reviews, but this book is so great that I feel compelled to write one.I finally bought an Instant Pot a month ago. I'd been trying to learn how to use it and what to make with it, when I stumbled upon a recipe for Chicken Korma on the author's blog. I'd never cooked Indian Food before because I always thought it would either take too long or I wouldn't have all the right spices. But, I figured I'd give it a shot. The recipe was so well-written and thought out, that even though this dish seemed kind of involved for my first attempt at Indian cooking, I was able to easily follow it. The result was amazing. It was the best tasting Indian food I'd ever had, and it was the best food I've ever cooked (my wife thinks so too). I was so inspired from making the Chicken Korma that I read more about her blog, saw she had this cookbook, and ordered it. I've made a few recipes from it now, and each one I try comes out so amazing. The recipes are easy to follow, the results are great, and best of all, the ingredients are all healthy and good for you. I could have just followed the recipes available for free on her blog, but I like having a cookbook. I find it much easier than having a laptop in the kitchen. Plus the book organizes the recipes in a helpful way and provides useful context and tips. One of the best purchases I've made recently.

Amazebomb ! Simplified cooking yet full of flavor. Buy it, use it - you won’t regret it.
I have been visiting myheartbeets.com (Ashley’s blog) for about 5 years and have been cooking from this book for the last 3. I have probably made 10-15 dishes from this book and many are now on repeat request from my kids, and their school friends.Some favorites : butter chicken, ground lamb, various lentil dishes, pork vindaloo, lamb curry, aloo gobi, chicken biryani, chicken tikka masala rice.All the recipes I have tried are well thought out, well measured and the instructions are very clear. The instantpot just makes things so much easier to cook and cleanup after. Compared to other Indian cookbooks, I don’t dumb down/adjust the spice levels as over time I have gotten to trust Ashley and the outstanding results her recipes produce. While her recipes pack a full flavor profile of Indian food, they are never over spiced.In addition to the cookbook, I have made a few things directly from the blog (myheartbeets.com) which have been crowd pleasers. Definitely try out the spiral cut ham with brown sugar and honey (a hit at our last Christmas party) and the Texas chili (a hit at my office chili challenge)P.s. I do keep a well stocked spice cabinet and most things in the book are available at your local Indian grocery store. The variety of spices Ashley uses may seem overwhelming, but honestly $20-30 at the local Indian grocery store will get you all the spices you may need for the next year !
