Please excuse my ignorance as I am a beginner. Are these put over the top of the original grip or do they replace the original grip ?

The choice is yours, it all depends on how thick you want your grip to be and what feels most comfortable. Personally, I put this over the existing grip which suits me best and gives that extra bit of cushioning. I've been using these grips for many years and always been happy with the way they perform.

Can this be applied to tennis rackets?

I think it is easily long enough to fit a tennis racquet grip.

Is this self-adhesive?

No, the back of overgrips do not have adhesive. Pack include stripe with adhesive to hold overgrips on the racket.
