Does horl make/sell replacement diamond grinding disc?

They are for the moment not available in the USA market.
We are working on making replacement disc available for you.
 
The diamond grinding surface lasts a kitchen life long. The diamonds are harder than any knife steel and therefore hardly wear out during a grinding process.
During the first grinding processes, a few particles come off and the surface becomes noticeably smoother. The grinding wheel has then reached its desired state of use. 
 
The diamonds are held in a nickel bed. It is recommended to keep away from pointed, jagged or damaged objects, as some diamonds could fall out.
Therefore, only use the roller grinder for knives with a smooth blade geometry.

Can you use these to sharpen a shaving straight razor?

Thank you for your question.
The HORL® sharpener is basically designed for kitchen knives.
Bread knives, scissors, straight razors or axes are not suitable for the HORL and we advise against sharpening them with the sharpener.

What is the expected lifespan on the surfaces of the 3000 & 6000 discs?

Thank you very much for your interest in the HORL products an reaching out to us.
 
The corundum whetstones wear off visibly during grinding and with average use, they have a service life of 3 - 6 years. The #6000er corundum whetstone wears off faster than the #3000er corundum whetstone. Before and after grinding, remove any grinding dust from the sharpener, Magnetic-Angle-Support and knife.

Can this be used on ceramic knives?  I understand the magnet will not hold the blade.

Basically, the HORL is well suited for ceramic knives.
Since ceramic is not magnetic, the magnetic angle support cannot hold the knife but can still be sharpened freehand with the HORL 2
