Q: If you remove the headrest pillow does the hard plastic in the hole behind your head ever bother you?

Depends on your height. I'm just over 6' (183 cm) and I don't use the headrest that often. The plastic cutout sits basically where my neck is; above my shoulders and below the base of my head, so it doesn't really bother me.

Q: Are the armrests removable?

You can possibly not attach them at all I think.

Q: Can the armrests be removed ?

Yes, the armrests can be removed. I assembled this chair for my son. I had to attach the armrests using screws that were provided and an Allen wrench (also provided). So they can be removed.

Q: I'm very interested in the attachment mechanism, it looks like its easy to lean back in, is this true?

The chair has two different options for leaning back; one is a combined lean with both the seat and seat backrest . The second option controls only the backrest. I overall it is very easy to lean in and reset the positioning afterwards.
