What are differrences between ramyum, chowmein, lomein, ramen, hakka noodle, shanghai noodle, egg noodle, wheat noodle? Anyone, please explain. Thanks

"Ramyum" is the Korean version of Japanese "ramen." "Ramen" is the Japanese version of the Chinese "lamain." "Lamain" originated in China, is a type of noodles made by twisting, stretching, and folding the dough into strands. 
"Chowmein" and "lomein," for American, "chowmein" means the dish that consists of sautéed vegetables and meat and bags of snack-like deep-fried noodles, and "lomein" means soft egg noodles and vegetables and meat sautéed together in frying pan. However, for authentic Chinese cuisines, "chowmein" uses soft egg noodles just like "lomein" and deep fried until crunchy, then top with freshly sautéed vegetables and meat. 
"Shanghai noodle" is a type of Chinese noodles originated in Shanghai. It's thick white noodle made from wheat flour and water. 
Hakka noodle is another Chinese noodle, originated in the Hakka province. Hakka cuisine is a Southern Chinese cuisine. Hakka noodles are made from rice flour and water, usually in a flatter shape, but not as thin as the cellophane noodles we find in the market.
"Egg noodles" are similar to angel hair pasta, usually made from wheat flour, water, and eggs. It can be thick or thin, and it’s very popular in the Southern part of China.
For the term "Wheat Noodle," I would interpret it's a general description of most Chinese noodles, as there are different types of noodles made from wheat or rice flour or a variety of flour in China. Hope this helps.

How long will they keep if i only use 2 servings at a time?

Depends on how often you use it. I ordered it in July 9th and the expiration date is March 2019. There are 13 servings in each bag. Since this is a twin pack you will get 26 servings. It’s a little confusing since there are 8 bundles in 13 servings. If you use 60% of a bundle It will last 13 servings. Hope this helps.

i see people referencing dried noodle, but are they truly air dried and not fried?

Asian dried noodles are similar to pasta. They're not fried. When you see noodles labeled or categorized as "instant noodles" or "ramen," they're mostly fried noodles. Hope it helps.
