Q: Will this fit a 56/57cm head?

it will ''fit '' a 56 cm head but it will be loose as it states that it's 60-61 .it's only 1 size.

Q: Will this hat fit a 61cm head ? I know it says it will but will it actually fit ?

can't answer about the fit or size of the cap, as it was bought as a present for my grandson......All I can say is that he loved it !!!!!!

It fits great, proper peaky blinders hat. Very comfortable. My husband is 55cm and its lovely on him and it fits me and I am around 59cm.
